Scallops have played a prominent part in religious, artistic and architectural history. The shell features in numerous works of art, the most famous probably being Botticelli’s ‘The Birth of Venus’.

The lovely, fan-shaped shells open to reveal firm, translucent, creamy meat with a bright orange roe or coral. Revered by chefs and diners around the world, the soft texture and delicately mild, sweet, buttery flavour of scallops are enjoyed even by those who are not particularly fond of other shellfish. 

Scallops naturally vary in size, ours are available per 400g, approximately 14-18 scallops. Please be aware that the weight of this product may vary by up to 10%.

Our local Dorset scallops are hand-dived or dredged on the flatter sand bars of Lyme Bay and Lulworth Cove. Scallop divers fish to depth as low as 100 feet, scouring the seabed in low visibility for the tell-tale signs of the shellfish buried in the sandy bottom.

A wonderful start to a meal, scallops need the minimum of cooking. Undercook rather than risking overcooking. Just sauté quickly in a little butter until the meat turns opaque and begins to colour and caramelise. 

When serving, keep it simple: don’t overwhelm scallops with highly flavoured sauces except in tiny amounts as a zingy accompaniment. Scallops pair well with bacon, chorizo, black pudding and garden peas. At the shop, we serve ours with a fresh salsa verde, homemade by our in-house chef.

Best eaten immediately. 

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days. 

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
