Samphire is a grassy-green vegetable with thick, juicy stems that grows around rocks in coastal marshes. From Shakespeare’s King Lear to today’s trendy restaurants, its popularity has risen and fallen over the centuries. But in fashion or out, its distinct, crisp, salty flavour complements fish and shellfish to perfection.

Samphire can be eaten raw or cooked, taking just a few minutes to steam or boil. Serve with a shake of pepper, a squeeze of lemon and a knob of melting butter.

Best eaten immediately. 

Store in the fridge between 0ºC-5ºC, and eat within 10 days. 

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
