With its tender, flaky, pearly-white flesh and mild, subtle flavour, cod has always been one of the UK’s favourites. The classic choice for fish and chips, it’s actually a very versatile fish, suited to cooking in a variety of styles, and matching well to most flavours. Our premium cod cuts are sourced from MSC-certified sustainable stocks.
Our experienced buyers source North Atlantic cod directly from the market floor at Peterhead, arrange for it to be filleted, packed in ice, then shipped overnight to arrive in Weymouth the next day.
We do also get the occasional locally-caught fish. Cod sometimes stray south in the summer and from time to time Weymouth boats targeting pollack land a few in their baskets.

This versatile fish can be pan-fried, roasted, poached or steamed – and of course, battered and deep fried. The key with cod is to avoid over-cooking, so it’s less well suited to grilling. Cod is also great in stews, pies and casseroles and stands up well to more robust flavours. It works particularly well with other seafood, like clams, mussels and prawns.
Cod loin is at its best oven roasted with a herb crust, while for delicious, simple cod fillets, pan-fry in oil and butter, then finish in the oven on a low heat.
