Gilt Head Bream
Considered by many to be the most delicious of the breams, and a particular favourite across Southern Europe and the Mediterranean, the gilt head, which gets its name from the golden band between its eyes, has medium-to-firm, flaky, pinkish flesh and a uniquely delicious, clean-tasting, sweet flavour.
Ranging in size from 300g to 1kg, a whole gilt head bream makes a perfect meal from one up to three people. Our gilt head bream come scaled & gutted, or if you prefer we can fillet them. please be aware that the filleted weight will be approximately 40% of the whole fish weight.
Normally found in the Mediterranean, gilt head bream are not indigenous to UK waters, but in recent years they’ve started to show in increasing numbers in the South and South-West. We don’t import farmed fish, so gilt heads are only available when they’re caught on the line by local boats.

Contains FISH
Bream is well-suited to baking, grilling, shallow frying or poaching. It’s also delicious on a barbecue. It pairs well with fennel, sorrel, lemon, thyme, tomatoes, parsley, olives, asparagus, peas and almonds. Grill or bake a whole fish some sea salt, lemon and herbs, like the Spanish do, where ‘dorada’ is one of the country’s most popular fish.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
