Grey, or silver, mullet, with its distinct, slightly nutty flavour, born of its coastal habitat, is a delicious and economical alternative to sea bass. A mullet’s flesh is bright pink, with some darker meat and a wonderfully lean, firm texture. Its stronger taste means it pairs extremely well with more robust flavours.
Our whole, fresh grey mullet range from 600g up to 2kg – the perfect size to serve from one up to four people.
Our grey mullet come scaled & gutted, or if you prefer we can fillet them. please be aware that the filleted weight will be approximately 40% of the whole fish weight.
Mullet is found all along the Dorset coast and within tidal estuaries. It’s important to ensure the fish are caught in the open ocean rather than from estuary waters, where they tend to take on the earthy flavour of their environment. Our grey mullet come to us straight off the local boats, or sourced from the fresh fish markets in Brixham and Plymouth.

Traditionally, mullet is grilled or pan-fried whole or in fillets, skin on, to protect the fish. Mullet cooks very quickly, so be careful not to overcook as it will become dry. It’s also excellent for steaming and poaching with plenty of liquid. You can substitute grey mullet in virtually any sea bass recipe.
Whole mullet is excellent steamed or baked with fresh spinach to offset its slight nuttiness. Fillets are delicious pan-fried with Asian or North African flavours.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
