Traditionally, mullet is grilled or pan-fried whole or in fillets, skin on, to protect the fish. Mullet cooks very quickly, so be careful not to overcook as it will become dry. It’s also excellent for steaming and poaching with plenty of liquid. You can substitute grey mullet in virtually any sea bass recipe.
Whole mullet is excellent steamed or baked with fresh spinach to offset its slight nuttiness. Fillets are delicious pan-fried with Asian or North African flavours.

Hake’s popularity is based on its versatility. Like most white fish, it’s tasty on its own, or can be paired with flavours as diverse as chorizo, horseradish and coconut. It’s excellent grilled, pan-fried or baked, or battered and deep-fried.
A whole roast hake makes a fabulous centrepiece served at the table. absorbs flavours well, so stuff the cavity with delicate aromatics like fennel, lemon and thyme.
