John Dory are landed locally in day boat nets or as a by-catch from the bass fishermen.
They’re regular but not that prolific, so we add to the Weymouth catch with fish from Brixham market, where we employ experienced fish buyers to target small quantity, high quality, small boat landings.

John Dory is a versatile fish ideal for pan-frying, grilling, roasting, steaming or poaching, but be careful not to overcook and dry it out. Its creamy, white flesh has a dense texture, quite similar to Dover sole, so it also holds up well to strong flavours. The head and bones make a particularly good fish stock. Pair John Dory with other flavours of the sea, like fresh shellfish. A whole John Dory, roasted in the oven with sea salt, oil, lemon and a few sprigs of thyme is a show-stopper.
You can also try it with spice and robust herbs, but all that’s really needed with pan-fried fillets is a drizzle of olive oil or a knob of butter and squeeze of lemon juice.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
