We buy local trout from Houghton Springs Farm in Dorset. It’s harvested at the perfect size to serve whole, ideal for grilling or baking. Life in its natural, spring-fed, freshwater ponds gives Houghton Springs trout a delightful nutty flavour, more subtle than salmon, with firm, pink-to-orange flesh and small flakes. A great source of Omega-3 oils, it also has comparatively less fat than other oil-rich fish.
Our whole trout are typically 450g-600g. The smaller fish are a generous main course for one, larger fish should serve two.

Trout is the basis for a huge variety of much loved recipes, like trout Meunière or baked with bacon and almonds. More recently, there’s also been a trends towards using stronger, spicier flavours. It’s a versatile fish that can be sautéed, grilled or baked en papillote, and also lends itself well to cold or hot smoking. Trout pairs well with garden herbs, almonds, lemon and white wine.
Oven bake a whole trout in foil parcels with a drizzle of olive oil, lemon and fresh herbs stuffed in the cavity for about 20 minutes. Simplicity itself.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
