Samphire is a grassy-green vegetable with thick, juicy stems that grows around rocks in coastal marshes. From Shakespeare’s King Lear to today’s trendy restaurants, its popularity has risen and fallen over the centuries. But in fashion or out, its distinct, crisp, salty flavour complements fish and shellfish to perfection.
We source our samphire from a variety of specialist producers worldwide, depending on quality and availability.
