    All our crab and lobster are caught the traditional way, in pots from the nutrient rich waters around Portland Bill. When you’ve got world renowned seafood on your doorstep, why would you ever go anywhere else?

    We source only the finest local Dorset oysters. Depending on availability, that means fabulous Portland Pearl oysters, grown just round the corner at Chesil Beach, or wonderful Poole Bay pacific oysters, cultivated in the micro-tidal waters of Poole Harbour.

    Langoustines have always been a prized Scottish catch. We source only prime, North Atlantic langoustines, landed at Peterhead and shipped to Weymouth the next day. 

    We source, sustainable, giant, wild-caught prawns from Argentina, supplemented on occasion by high quality, farmed South East Asian prawns.

    Of course, there are hundreds of ways to enjoy these delicious shellfish, but we recommend keeping it simple, to make the most of their flavour.

    If you’re entertaining, try a classic French fruits de mer platter. Picked crab meat, sumptuous lobster, juicy langoustines and prawns, oysters in the half shell, served over ice, with fresh lemon, black pepper, garlicky mayonnaise and warm chunks of rye or granary bread and butter. It simply doesn’t get any better.

    To prepare the crab, remove the legs and claws and set aside. Pull the body and shell apart and scrape the brown meat out of the shell into a bowl. Removing the grey gills from the central part of the body, cut the crab in half. Pick out all of the flesh from the honeycombed centre. Wrap the legs and claws in a tea towel and crack them open with a rolling pin or mallet. 

    Crab, lobster, langoustines and prawns should be stored in the fridge, between 0ºC-5ºC and eaten within 2-3 days. Do not freeze.

    Oysters are best eaten immediately but can be stored in the fridge between 0ºC-5ºC. Eat within 3-4 days. 

    Shucked oysters can be frozen but must be cooked before eating. Eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
