Cook skate exactly as you would a flatfish, like plaice or lemon sole. As there are no bones, it’s a fish that’s very easy to cook – we suggest pan-frying, but you do have to keep an eye on it to make sure it doesn’t overcook and dry out. When cooked the flesh should lift cleanly off the cartilage both sides of the wing.

Keep it simple, skate doesn’t require much more flavouring than seasoning, lemon and butter.

Best eaten immediately. 

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days. 

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
