When haddock has been salt cured and smoked, its sweet, distinctive flavour is beautifully intensified. Firm, but deliciously flaky, our traditionally smoked, undyed haddock fillets are the ultimate comfort food.
Our smoked haddock sides have a minimum weight of 270g, a good serving for one.
We source our naturally smoked North Atlantic haddock from traditional producers in the north east of Scotland. The haddock fillets are brined, then hung on racks in brick built chimneys and smoked for 10-12 hours over oak and beech.

Haddock’s rich smokiness pairs perfectly with rich, creamy flavours. As well as a classic fish pie, it’s a delicious addition to fishcakes and croquettes, pâtés and mousses, omelettes, soups and chowders. Traditionally it’s the main ingredient in kedgeree, with boiled eggs, rice and spice, and Scottish cullen skink soup.
To make the most of its smoky flavour, season and poach the fish in milk at a low temperature for 5-10 minutes, depending on the size of fillet.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
