Arctic Char
Arctic char is a member of the salmon and trout family, which sticks to the cold waters around the Arctic Circle. However, it’s now available fresh in the South West thanks to the remarkable efforts of Hans Hoff, an aquaculture pioneer at Houghton Springs Farm in Dorset. Char is similar in taste and appearance to sea trout, but lighter and cleaner on the palate, with a texture more like a sea bass. It’s also less fatty than salmon or trout, so it’s a healthy choice too.
Our Arctic char come scaled & gutted, or if you prefer we can fillet them. Please be aware that the filleted weight will be approximately 40% of the whole fish weight.
We buy our char direct from the man himself, Hans Hoff at Houghton Springs Farm, near Blandford Forum in Dorset. Houghton Springs is the only successful producer of arctic char in the UK, and Weyfish is the only fishmonger in the country to stock Hans’ char, with almost all other production going to top London restaurants.

In general, cook Arctic char as you would salmon or trout. Fillets and steaks can be baked or grilled, while a whole fish can also be poached. The skin becomes thick and leathery after cooking, so it’s best to remove it before serving Like salmon, you can pair char with stronger flavours.
Bake a whole fish in the oven, uncovered, with a drizzle of oil salt and pepper for just 20 minutes.
Pan-seared and oven finished gives you a crisp, caramelised finish on arctic char fillets. Serve with lemon and spinach.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
