Did you know?

It’s easy to ‘spot’ a plaice thanks to the bright, orange-red markings on its back. The spots work as camouflage on the seabed, but once caught, they’re also an indication of freshness. The brighter the spots, the fresher the fish.

Plaice has always had a place in our hearts in the UK. It’s much loved for its sweet, subtle, slightly salty flavour and tender, white flesh. These days plaice is rather too often overlooked by top chefs and restaurants, but its moist texture and delicate taste make it ideal for a simple, healthy and delicious meal.

Our whole, fresh plaice range from 300g-1kg, the perfect size for a shared starter for two, or a generous main course for one.

If you prefer, we can fillet a whole fish for you. Plaice fillets are taken from the top (dark) and bottom (white) side of the fish. The darker side yields the thicker fillet. Please be aware that the filleted weight will be approximately 50% of the whole fish weight.

Plaice is plentiful in local Weymouth waters, where it’s attracted to feed on the mussel beds off Portland Bill and around The Shamble Banks. Sustainably caught by rod and line or in day boat nets, and landed daily on Custom House Quay, if the local fishermen don’t bring any in, then we simply don’t stock it.

Plaice is best eaten as quickly as possible, as its relatively mild flavour can quickly fade. It’s an amazingly versatile fish, and cooks well across a whole range of styles, from oven-roasting to stir fries. It’s also great for battering. You can pair plaice with virtually anything, from simple steamed vegetables to rich cheese sauce.

For casual elegance, roast a whole fish on the bone and get the best of the flavour

Try fillets poached or pan-fried, with a lemon and parsley sauce, or rolled up and stuffed with a rich shellfish filling.

Best eaten immediately.

Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.

If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
