Red Mullet
A fabulous looking fish with a formidable culinary reputation, stretching right back to antiquity. Red mullet’s famous orange, red and pink skin, reveals lean, pale pink, slightly oily flesh and a delicious, almost scented, flavour, created by its diet of crustaceans. Delicious for a simple midweek meal, perfect drama for your dinner party table. Our whole, fresh, red mullet provide a wonderful splash of colour on a plate. Individual fish range in weight from 200g, which will serve one person, up to 600g, which will serve two. If you prefer, we will fillet a whole fish for you. Please be aware that the filleted weight will be approximately 40% of the whole fish weight.
Red mullet is not common in Dorset waters and tends mainly to be a by-catch in the day boat nets. When it’s available, we offer fresh, locally-caught red mullet, and only rarely buy this fish in from the larger markets along the south-west coast.

Red mullet is such a flavourful fish in part due to its high fat content. Despite its delicate taste, it’s is a versatile fish that can take strong flavours and also cooks well in a variety of styles, including baking, deep frying, poaching, grilling or steaming. It’s especially delicious on the barbecue, and is a prized ingredient in fish stews like Bouillabaisse.
Given their size, red mullet fillets are often served as an appetiser. For beautifully cooked fillets, simply fry, skin-side down, in a hot pan with olive oil until the skin is crisp. Cooking this way will produce ‘fish crackling’, crisp, salty and totally delicious skin.
Best eaten immediately.
Store in the fridge between 0ºC-5ºC, and eat within 2-3 days.
If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
